Maple Cream Float

I love floats.  They are sweet, light and pure pleasure.  You can make a float as simple as combining your favorite soda and a few scoops of ice cream or as complicated as a homemade soda, syrups, flavored creams, ice cream and even whipped cream on top.

I went the simplistic yet thoughtful route for this float utilizing fantastic cardamom maple syrup that was gifted to me, vanilla bean gelato, a can of club soda and a few dashes of cinnamon.  I am essentially making maple soda, but did not go as far as to use the soda stream or ISI canister for the beverage, opting to combine syrup and unflavored soda water in the dish.  I love the way dairy interacts with carbonated beverages, where the results are slightly tangy and effervescent sweet dairy treats.

Be sure to mix up this beauty after you assemble to make it creamy, bubbly and maple throughout.

Maple Cream Float

  • 1 can Club Soda

  • Vanilla Gelato

  • Pure Grade A Maple Syrup

  • Cinnamon

1. Place two scoops of gelato in a tall bar glass or sundae glass.

2. Drizzle 1/4 cup maple syrup into glass.

3. Add two dashes of cinnamon and fill glass with club soda.

4. Add a few dashes of cinnamon on top and serve with a long spoon to stir.
