Herb Salad

This herb salad is an answer to a craving hit that you cannot understand.  Rather than start the never ending one last spoonful with the ice cream pint, bag of licorice or salted cashews this salad can save my life (both mouth and mind) from distracting cravings.

I often add herbs into my salads, soups, rice paper rolls, cabbage wraps, taco name it, I love a heavy punch of fresh herbs.  But what about a straight up herb salad? Would it be too pungent to eat a bowl of? Answer? No.  

This can be as simple or involved as you like. I am often happy with simply mint, basil and scallions as my flavorful mouthful.


  • 1/2 cup Fresh Mint

  • 1 cup Fresh Basil

  • 1/2 cup Cilantro Leaves

  • 1/2 cup Parsley Leaves

  • 3 Scallions, greens only (save whites for a saute in the morning)

  • 2 tsp Balsamic Vinegar

  • 1 Tbsp Extra Virgin Olive Oil

  • 1/4 tsp Flaked Sea Salt

1.  Place fresh herbs in one pile on your cutting board.

2. Roughly chop herbs together, releasing flavor.

3. Toss herbs in balsamic and olive oil with a good sprinkle of your favorite sea salt.
